Scallop & Broccolini Salad with Parsnip Crisps.  This is an amazingly simple dish to create, the delicious caramelisation on the scollop along with the fresh infusion of the broccolini marries so well.

Tomato & Roasted Capsicum Soup with Volcanic Black Salt, Rosemary Peppered Chili Pink Salt & Sesame Seed Bread sticks.  This photo makes me all warm and fuzz, as a kid I always spent my winters rugged up, watching TV with a bowl tomato soup, I had played around with this image for some time and then one day this popped in my head & a few hours later I had what you see here.

Death By Chocolate

Where do I start, you are looking at a layered Lindt® Chocolate Cake, it has 8 layers, 2 kg of chocolate within, this monster stole 16 hours of my life to create from start to finish, no really!  

From top to bottom using milk, dark 70% darker 85%, it has 4 cake bases in total, cut in half and In between each layer is a stiff gnash, much the same as the outside of the cake itself.

I set myself a difficult challenge to create a ridiculously elaborate cake for my exhibition piece and I bit off more than I could chew, it was a very stressful day, I have a few grey hairs from it, but in the end a  tasty cake prevailed and now this monster chocolate delight has been immortalised in culinary history for all time.

It's not the prettiest dish but it was damn tasty, it's a combination of various seafood items including Sous Vide Toothfish Fillets, Atlantic Clams, Tasmanian Muscles, Braised Witlof, Sweet Potato & White Wine Bourblanc Sauce.

This is a Spicy Seafood Paella, I recently have been working with a handful of chefs to create a selection of amazing dishes for various events and functions, this Paella is a family recipe from Spanish Chef Miguel Maestre, his simplistic dishes seemed easy enough until I tried it, (what you see, this was my second attempt) The damn Calasparra Rice is challenging to cook with.
